Pastry Chef

We are currently seeking a talented and passionate Pastry Chef to join our kitchen team and help create exceptional desserts, pastries and baked products across the Resort’s dining outlets and events operations.

As Pastry Chef, you will work closely with the Head Chef and Sous Chefs to develop and deliver high-quality pastry and dessert offerings that enhance the guest experience and support the continued success of our food operation.

This role requires creativity, attention to detail, strong organisational skills and a passion for producing consistently high standards in a busy hospitality environment.

Key responsibilities:

Pastry & Food Preparation

  • Prepare, cook and present high-quality desserts, pastries, and baked goods
  • Work with the Head Chef and Sous Chefs to create and develop dishes that drive sales and enhance the guest experience
  • Support the implementation of new menus and seasonal offerings
  • Maintain consistency in presentation, quality and portion control
  • Ensure all food is prepared and stored correctly to minimise waste

Kitchen Operations

  • Maintain a clean, organised and hygienic working environment at all times
  • Monitor stock levels and understand required stock holdings for weekly business levels
  • Support waste control, food rotation and cost management procedures
  • Maintain flexibility and support across all kitchen sections when required
  • Communicate effectively with kitchen management and front of house teams

Customer Satisfaction

  • Deliver consistently high-quality food that exceeds guest expectations
  • Contribute to achieving departmental customer satisfaction targets
  • Respond positively to guest and member feedback
  • Support the delivery of an excellent dining experience through quality and consistency

Teamwork & Development

  • Lead by example and demonstrate a positive and professional attitude
  • Work collaboratively with colleagues across the kitchen and wider Resort teams
  • Assist with training and developing junior team members
  • Maintain effective communication within the kitchen brigade and front of house teams
  • Present yourself according to company dress code and uniform standards

Compliance & Standards

  • Maintain proper food safety, hygiene and HACCP procedures in line with legislation and company policy
  • Ensure Stoke by Nayland Resort procedures are followed at all times
  • Keep risk assessments and HACCP records up to date
  • Maintain current knowledge of allergen, COSHH and Health & Safety legislation
  • Complete all required online training courses in a timely manner

What we're looking for:

  • Previous experience within a pastry chef role or similar kitchen position
  • Passion for pastry, desserts and creative presentation
  • Excellent attention to detail and organisational skills
  • Good understanding of food safety and allergen procedures
  • Ability to work calmly and efficiently under pressure
  • Flexible approach to working hours, including evenings and weekends
  • Strong team player with a positive and professional attitude
